Roasted Cherry Tomatoes on the vine, with kosher salt

The perfect side dish to any BBQ.


  • 2 lbs. of cherry tomatoes
  • 3 Tablespoons extra-virgin olive oil
  • Kosher salt
  • Freshly ground black pepper
  • 1 small bunch fresh herbs such as basil, rosemary and/or oregano


Preheat oven to 400° F.

Place the tomatoes on a sheet pan.

Drizzle with extra virgin olive oil.

Season with salt and pepper to taste.

Roast until the tomatoes collapse, about 10 minutes.

Chop your fresh herbs.

Add roasted tomatoes to serving bowl, add fresh herbs and toss gently.
