Jack Bigej, owner of Al’s Garden Center, offers this speecial treat only once a year. Ice Apples, named for their crystallized center, are Fuji apples, left on the tree until the first frost. The frost leaves the apple crisp and causes the inside of the apple to crystallize, resulting in the sweetest, most delicious apple you have ever tasted. Ice Apples are not only great as a snack or a treat, but they are also fabulous baked and used in dishes. Our friends over at the restaurant Vitality at Wellspring in Woodburn came up with some great recipes like Ice Apple Applesauce, Ice Apple and Brie Quesadilla with Mango Salsa and Ice Apple Sorbet.
